Core Components & Function

Roasting Drum: A large, cylindrical metal vessel that rotates horizontally.

Heat Source: Typically gas burners located beneath the drum, heating the metal and the air inside.

Paddles/Flights: Spiral fins inside the drum that tumble and mix the product for uniform roasting.

Motor: Drives the drum's rotation and sometimes the cooling tray agitator.

Exhaust System: Removes smoke, chaff (skins), and dust from the drum and cooling tray.

Cooling Tray: A separate tray with a fan and agitator to rapidly cool the roasted product after it drops from the drum.

Roasting Process

Loading & Heating: Unroasted product (coffee, nuts, etc.) is loaded into the preheated drum.

Drying Phase: Moisture is removed as the drum rotates, with heat transferred by conduction (from the hot drum) and convection (hot air).

Browning/Development: The product browns (Maillard reaction), and sugars caramelize, developing aroma and flavor.

Cooling: After reaching the desired roast level (e.g., “first crack” for coffee), the product is discharged into the cooling tray, where air rapidly cools it.
